Irish coffee is a popular cocktail made with coffee, Irish whiskey, sugar, and cream. The origins of Irish coffee are somewhat disputed, but it is generally believed that the drink was first created in the early 1940s by Joe Sheridan, bartender at the Foynes Airbase in County Limerick, Ireland.

Foynes was an important hub for transatlantic flights during World War II, and many passengers would pass through the airbase on their way to and from North America. On a particularly cold and stormy night, Sheridan decided to create a special drink to warm up the weary travelers. He brewed a strong pot of coffee, added a generous shot of Irish whiskey, and topped it off with a dollop of whipped cream.

The drink was an instant hit with the passengers, who asked Sheridan if he had used Brazilian coffee in the recipe. Sheridan, who was proud of the quality of the Irish coffee, jokingly replied that it was “Irish coffee.” The name stuck, and the drink became a popular staple in Irish pubs and bars.

In the 1950s, Irish coffee was introduced to the United States by a travel writer named Stanton Delaplane, who was challenged to re-create the drink at the Buena Vista Cafe in San Francisco. The Buena Vista Cafe still serves Irish coffee to this day and is widely considered one of the best places to try the drink.

Today, Irish coffee is enjoyed all over the world and has become a symbol of Irish hospitality and warmth. It is particularly popular during the winter months, when people are looking for a cozy and comforting drink to help them through the cold weather. New versions of the drink have been created such as the one with Galys Coffee, a liquor made with the finest Brazilian coffee.
